I love to fish for about anything but I grew up on the creeks and streams of east Tennessee catching trout, bass and panfish. My preference is wade fishing but the wife is wanting to get more into it with me this year and we are thinking of getting a canoe and trying float fishing but I am not familiar with this type of fishing so any information regarding that is welcome as well.
I guess more specifically I am looking for water that is readily accessible for when the wife joins in but I am not opposed to wading a distance if the fishing is right.

You cant do this now due to the heavy generation but you could wade fish the Caney for trout. You can search back through some of the threads for some good info on that. Also you have the Elk, and Duck River. Also the Stones River below Walter Hill dam is decent for wade fishing.
