I cannot answer your question on hunting from a kayak. I have a friend that uses his Jackson Coosa as a duck blind over in east Tennessee and does very well. I don't know about squirrel hunting though, but I used to do it out of a canoe back in Indiana. You will have to consult with a TWRA Specialist.
Standing and fishing is very possible out of a kayak Wilderness Systems, Jackson, Hobie, Ocean Kayak, and several other manufactures make kayaks that would make this possible.
I suggest a SOT (Sit on Top) and something that is a little wider. The wider the more stable.
Like txnative said "kayaks with a drive system are better suited for little to no current, in deeper waters with not many obstructions".
I've herd of the show on WFN, but I don't have that channel. Comcast dosen't carry it.
The price varies with getting setup you can go bare bones cheap paddle, cheap kayak, cheap PFD, no electronics, and get on the water for under $500, or you can get quality equipment carbon fiber paddle ($400), kayak geared PFD ($75), kayak designed for what you want to do ($1000-$2500), good electronics ($350-$1000). So you can get on the water for as little as $600 to as much as $3-$4K just depends on what you want. It's like using a $100 casting outfit, and then stepping up to a $300 outfit, the $50 gets the job done, but the $300 outfit is more fun.
