I use the PIRAHNA filet knife. I've had Rapalas, manual and electric, and Mister Twisters. T

Mister Twister Piranha saltwater fish fillet knife heavy duty 110v AC 9 in blade

This one beats the other knives (that I have had) hands down. I've got a BubbaBlade and it is good on bigger fish, but it is a BIG knife.

Alphahawk - thanks for the tip on the Dexter knife. I was at a restaurant liquidation to buy a stainless steel table for fish cleaning and found one in a a box of knives. The box went for a higher price than I wanted to pay but was able to purchase it from the winning bidder for $5. Great knife!

I found out how terribly rusty my fillet skills were this weekend after fishing
Old Hickory sat. I caught a few forearm sized cats and a couple crappie on the flats so I kept them to eat. Haha I used a thin kitchen knife and butchered the fish bad. Might as well stuck a stick down the gullet and bbq'd them it would have been the same.

I did buy a new fillet knife from wally world Monday I think the Berkley so if it won't hold an edge I may try the old Berkley.
