Most amazing fish recipe I have ever eaten. Never been a big fish eater until finding this on Crappie.com. Any fish such as bream, bass, crappie, trout, talapia, etc will and do work. Just needs to be a thinner type fillet. You can play with spices and such as you please as well as the amount of bread crumb vs cheese. Try it and you will thank me I promise. I like to add a little salt, pepper, and itailian seasoning.

Baked Parmesan Crappie

Ingredients

1 or 2 eggs
¾ cup Panko Italian or any bread crumbs
¼ cup Parmesan cheese
¼ teaspoon ground dried thyme
Fish filets
¼ cup melted butter

Directions

1. Preheat oven to 500 degrees

2. In a small bowl prepare an egg wash. In a separate bowl, mix together the bread crumbs, Parmesan cheese, and thyme. Dip the filets in the egg wash and then press into the crumb mixture to coat. Place filets in a glass baking dish, and drizzle with melted butter.

3. Bake on the top rack of the preheated oven until the fish flakes easily, about 15 minutes.
