Nomad,
In calm waters, I like to use a 3/8 to 1/2 oz jig so i can feel bottom. Saugers live and feed on the bottom and if your offering is too high off the bottom, you'll catch less fish. As far as what they want, that is a crapshoot. Every day brings different conditions so the weight, color combinations, and minnow/no minnow vs plastic tail equations change. Have a varied selection of weights, colors, hair/no hair on hand and try them all.
The other day I was fishing with a buddy at a known sauger location and we fished for four hours, catching only one drum and one yellow bass. Then at 12:30, bluebird skies, I caught this six pound walleye on a red head jig with white hair and plastic trailer, no minnow. So you just never know so keep on jigging!
